Executive Chef Dee Chan, the chef behind 黑珍珠 The Black Pearl’s signature dishes, is joined by Chef Choi Hyun Seok, Executive Chef of CHOI. and a well-recognised figure among fans of Netflix’s Culinary Class Wars Season 1. Together, they bring decades of professional experience and two distinct culinary philosophies to the same kitchen.

Chef Dee’s cooking is grounded in refined, contemporary Cantonese cuisine: precise in execution, elegant in presentation, and always informed by a deep respect for tradition. Chef Choi brings a contrasting energy to the collaboration. He is known for his experimental approach and his ability to reimagine Korean culinary heritage in ways that feel both bold and considered. The theme “Seoul Meets Contemporary ‘Yue’” encapsulates the spirit of the event well: a meaningful dialogue between two distinct cuisines, expressed across eight carefully sequenced courses.

Kumquat jus adds a bright, citrusy cut through the richness of the duck, while blood orange rounds out the dish with its own gentle sweetness and acidity.
